Lucky Star® - Recipe


Low-Fat Fish Lasagna

Ingredients
2 tins Lucky Star Middlecut fish - brine poured off 1 medium onion- chopped 1tbsp canola oil 1 tin tomato soup 1 tin chopped tomatoes about lasagna pasta sheets 1x250gr low-fat cottage cheese 1 sachet low-fat Orley Whip - cream substitute 1 cup low-fat Edam cheese 2 tbsp grated Parmesan chopped parsley

Method:
Fry onion in oil until translucent. Add the fish and mash with a fork. Add the tomato soup and the chopped tomatoes. Let the mixture cook through. Season to taste and add chopped herbs. Layer the fish mixture alternatively with the pasta sheets(I made 2 layers). End with a fish layer. Now mix the cottage cheese, cream and cheeses and pour over the lasagna. Bake for 45 minutes until golden and bubbly.
