Lucky Star® - Recipe


SMOORMACKEREL

Ingredients
2 onions, sliced 1 t garlic 3 potatoes diced 3 ripe tomatoes diced or tin (410g) 1 T oil (for frying) 1 T salted butter 1 t brown sugar 1/2 t tumeric 1 t Rajah mild & spicy curry powder 1 t corriander paste or ground corriander 1 tin (425g) middlecut mackerel

Method:
Heat the oil and butter. Gently saute\' the sliced onions and garlic. Add the diced potatoes, make sure nothing sticks or burns during this stage. Add the diced tomatoes, sugar, tumeric, curry powder and corriander paste. Simmer until the potatoes are just cooked through and golden. Remove the mackerel from the tin. Discard the liquid and skin. Mash the bones and add to the potatoe mixture. Gently flake the mackerel, add to the potatoe mixture and heat through. Serve hot or cold.

Best enjoyed with: rice, pasta, toast, pap, samp OR just on it\'s own. Delicious!
